Craft requires focus, focus demands desire and passion, desire and passion create unforgettable experiences of the mind body and soul! For centuries Europeans have been preserving meats as a means of having a source of great food. Based on old world methods, using quality, locally acquired natural ingredients I decided to reintroduce an art form that has currently gone to the wayside. Regional Artisan Style cured Meats made in the custom of the Salumerie, offered to you and your clientele.
I reflect back to boyhood memories, as the leaves of fall trees changed colors and fell... aromas of various seasoned cured meats would fill the air, just as it has for centuries.
